an alt to “avo” toast

As an avocado toast connoisseur, I do not say this casually, when I proclaim that this alternative recipe and all iterations of it, may be taking the place of my OG staple. Plus, why is it rare to find the previously typical 5 for $5 anymore?! Ugh. It’s no wonder avocado is extra with the rising prices! Alas, one worry a time. And for now, it question may be: breakfast for dinner?! And if so, I dare you to tell me this isn’t freaking delish. PLUS, it’s so budget friendly that no one has the excuse to complain about “organic being too expensive".” If you have a freezer, you can make multiple servings for under $10. The most explosive, simply dreamy combination of flavors that will likely be the most delicious, elevated, fresh spin on toast you will have all summer. Basic recipe as follows:

INGREDIENTS
✧ 4 slices of sourdough or gluten-free bread
✧ 1 tsp grass-fed ghee
✧ 1/2 c petite green peas, thawed
✧ 3-4 garlic cloves, chopped
✧ 1 tbsp fresh squeezed lemon juice
✧ Lemon zest
✧ 1 tbsp EVOO
✧ Pinch of salt
✧ Himalayan Pink Salt

OPTIONAL
✧ Balsamic vinegar
✧ Shallot, chopped
✧ Aleppo pepper or crushed red pepper flakes
✧ Chopped fresh chives

NOTES
꩜ Shop wild, organic (spices & oils included) & in season whenever possible, plus make sure to fully clean all residue off produce with baking soda prior to cooking.
꩜ When I don’t have fresh sourdough boule,
Food for Life® Flourless Sprouted Grain Ezekiel Bread is my go to, otherwise Canyon Bakehouse Gluten-Free Ancient Grain Bread because I love the small size.

INSTRUCTIONS
1. Mix all ingredients while bread is toasting with ghee.
2. Spoon ingredients on toast.
3. Drizzle a little EVOO on toast + light dusting of salt.…ENJOY!

As with everything I make, I love to know the ingredients will fuel not only a beautiful plate, but a beautiful feeling inside. Steeped in the culture of being raised in Japanese and Italian homes, I understand the magnitude of importance food holds. I also believe in the philosophy of eating to live versus living to eat. It really is not about deprivation, it’s about remaining mindful and raising the vibration — no matter how incredible something taste’s, it’s also about how it “tastes” to our minds, bodies and souls that will keep the true “deliciousness” with us long past the moment of actual consumption. Pillars I continue to remind myself:

1. The quality of ingredients matter.
2. Less is always more.
3. Think loving thoughts while cooking and the food will taste better! #truth
4. Remain present while enjoying the intimate act of eating, it’s a game changer.

With love & gratitude, cheers to your good health!
